A carrot is considered a vegetable and is usually orange in color. Carrots used to be eaten raw or just included in cooking main courses or were used for garnishing. Now carrots are being used in types of food where they were never used before, such as in baked goods. Carrot cakes and carrot muffins are becoming more and more common as all types of people begin to try them. You'd need grated carrots for making muffins.

A traditional carrot and raisin muffin recipe requires flour, white sugar, baking powder, cinnamon, salt, baking soda, milk, butter, eggs, salt and grated carrots. You have to combine the dry ingredients in one bowl; this includes flour, baking powder, salt, baking soda and cinnamon. In another bowl, beat the eggs together with the granulated sugar and add the carrots, milk, butter and the raisins. When the mixture is smooth, add the dry ingredients mixture to it. Mix until the batter has no lumps and is smooth, pour them into muffin pans and bake for 20 minutes in an oven preheated to 400 degrees F.
