Cakes, baked goodies and pastries have to be on everyone's list of all time favorite food. Muffins are one of the more popular baked goods in any part of the world. A muffin has the texture and consistency of a cake but is smaller in size and is often round in shape. It has a base and a top that's slightly puffed up and bigger than the base. Sometimes it's made with fruits such as blueberries or bits of chocolate chips. A muffin can be consumed by one person in a meal.
There are several types of muffins but the English muffin has got to be one of the most popular. English muffins don't look like the typical American muffin. They look a little more like pancakes since they are cooked flat and just split in the middle. This is a breakfast staple in the United Kingdom. It is made from yeast leavened bread, milk and butter. It was actually an English baker, Samuel Thomas who moved to New York and brought the muffins to the United States in 1880. The McDonald's Egg McMuffin uses the English muffin as the sandwich to the egg and cheese mixture in between.
The early muffins were pieces of cake and did not really have a long shelf life. So marketing them or selling them to other consumers was not ideal, so muffins were something hat people only saw in their own kitchens. One of the innovators of muffins is Fannie Merritt Farmer. She made 15 original recipes of muffins in her cookbook which was published in 1896.
Muffins can also be made from cornmeal and from different types of grain. Cornbread muffins are great side dishes and need only a little butter and salt when served hot to enhance the flavor of the cornbread.
